Tapas Then and Now -- Tapa derives from the Spanish verb tapar : to cover. One table, of obscure origin, tells us that the first tapas were a slice of ham or bread used to cover the wine or ale goblet as a barrier against flying insects. An equally obscure legend relates that small servings of food were mandated by a Spanish King to dilute or cover the dangers of intoxication.Today, serve as a great vehicle for sampling bright bursts of flavors as a prelude or alternative to the traditional entree course.
